Going on four years in China and I still remember my first bowl of handmade noodles. There is nothing quite like it -the textured, chewy, dense goodness nestled in a steaming bowl of light bone broth. I stood mesmerized in the outdoor kitchen of the now defunct eatery, watching the chef’s expert hands create this magic right before my eyes.
First, he twists the dough.
Then twirls.
Afterwards some rapid bounces to separate the noodles.
Now into the water to boil.
Finally the noodles are plated, broth is added, then garnishes, and volia! The perfect lunch on a rain cooled summer afternoon.
